Dried Matsutake Mushrooms
Matsutake mushrooms are prized in Japan both for their flavor as well as to symbolize fertility and happiness. Also referred to as pine mushrooms, Matsutake are prized for their powerful flavor often described as spicy and intense with hints of cinnamon.
Place your dried mushrooms in a bowl with warm water or stock for 15-20 minutes, strain through a colander. Store unused dried mushrooms in an air-tight container away from sunlight. Properly stored, dried mushrooms will last for months
