IQF Escargot Stuffed in Shells with Garlic and Parsley
IQF* Helix Aspersa maxima (“Gros Gris” in French).
Cooked snails, stuffed in the shell with Pamplie AOC French butter, fresh parsley, and garlic.
Made and prepared in France.
1 dozen snails per tray
*IQF (individually quick frozen) is a method that does not allow large ice crystals to form in cells. Also, since each piece is individually frozen, particles do not cohere, and the final product is not frozen into a solid block.
This tray of 12 comes already prepared and requires heating at 375 degrees for 10-12 minutes before serving. The butter and garlic will cook the snails through.
Escargots de Bourgogne Sauvages, or Wild Burgundy Snails, are a timeless French delicacy and are finally available in the United States. The preeminent purveyors in Burgundy, Henri Maire and La Maison de l’Escargot, have been satisfying the most discriminating palettes in France since 1938 and 1894 respectively.
Tender texture and clean, woodland flavor make Burgundy Snails the perfect first course.
