Promontory is an Irish-style cheddar cheese made with pasteurized Jersey milk. Promontory gets its name from the Promontory Summit where the first Transcontinental Railroad in the US was officially completed in 1869.
This creamy, full-bodied textured cheese has citrucy, fruity notes and pairs well with full-bodied red wines, ales and IPAs. Promontory is perfect for mac-and-cheese.
The cheese has won several awards including a gold medal at the 2013 World Cheese Awards, Grand Champion at the 2013 Idaho Milk Processor's Association competition, 1st Place at the 2011 American Cheese Society.
