JACüTERIE (NY) is an artisanal charcuterie company in the Hudson Valley of New York. They operate out of their own USDA-inspected facility and specializes in European style dry-cured salami and whole muscle charcuterie. While they take their inspiration for flavors from across the globe, all products are made locally in the Hudson Valley, sourcing meat and other ingredients from as many local sources as possible.  BLACK HAWK FARMS (Kentucky) - Great beef starts at the ground level. Breeding cattle for over 50 years, Black Hawk Farms is a three generation family of row croppers with expertise in Agronomy and Beef Science. From practicing soil preservation, to recycling water for irrigation, to composting waste for fertilizer, they have spent years perfecting their conservation methods on their Kentucky farm. Wagyu, which are four breeds of Japanese cattle world renowned for their quality, have slowly made their way to the US over the last decade. IBlack Hawk cattle are raised in a low-stress environment, this means a friendly, hands-on approach with familiar faces they see on a daily basis, minimal transport, and a comfortable home.
